Our story begins in Burgundy, where the tradition of the Burgundian Snail (Escargot de Bourgogne) has been rooted for generations.
Guided by a profound love of gastronomy, we decided to make this local delicacy into a true culinary treasure.
Through decades of dedication, we have perfected the art of preparing of snails, with attention to every detail to offer you exquisite flavours.

We retrace our passion
for the snail…

In the interval between the 2 wars

The Mourey family cooked and prepared Escargots de Bourgogne which they gathered in Burgundy.
These are already gourmet Snails!

1979

By the decree of 24 April 1979, France regulated the gathering of wild snails for commercial and/or industrial purposes, which prohibited their use of the Burgundy Snail (Helix Pomatia).

For several years the snail had become rare in Burgundy, "Escargots Mourey” were already being supplied from parts of Central Europe.

1989

Up to 1989 the preparation and canning of snails was already being done by the Mourey family and their teams at rue Etienne Baudinet on the banks of the canal in Dijon.

In 1989 Louis-François Morin acquired business capital from SARL Escargots Mourey and SAS Bourgogne Escargots was born.

1990

He immediately retained the services of Mr JL Mourey, the last director of Escargots Mourey for almost a year, of his son D. Mourey who stayed on for a few more months, but also the men and women workers of whom some are still employees of Bourgogne Escargots in 2024!
The know-how of the teams and the recipes relished by the Djonnais were handed down and endure.

1990

BOURGOGNE Escargots quickly moved to its current site at Chevigny-Saint-Sauveur in the Dijon metropole so it could develop on a larger production site which enabled it to operate more comfortably and to grow.

For almost 20 years Mr Morin and his teams developed BOURGOGNE Escargots and positioned it as a the top player in the market range.

2007

France Aubriet then took up the reins of the enterprise.

Under his leadership, the company experienced strong commercial growth both in France and internationally.

2022

Since January 2022, Loïc Quenardel presides over the fortunes of BOURGOGNE Escargots.
The company is proud to have cultivated the taste of excellence for almost a century while ensuring 100% Burgundian production.

For a very long time, in fact, while snails originate from Central or Eastern Europe, BOURGOGNE Escargots is one of the last snail manufacturers to guarantee 100% preparation in France at its historic Chevigny-Saint-Sauveur site, in the heart of Burgundy, with the highly qualified and loyal staff, which is its pride!

2023

On 31 December 2023, Mr Ahmad retired after 37 years of good and loyal service originally to Les Escargots Mourey and then to BOURGOGNE Escargots.

He remains part of the spirit of our wonderful company!
